Avocado Tuna Salad

Ingredients

  • 1 5-ounce can tuna, preferably packed in olive oil, drained
  • 1/2 ripe avocado, roughly chopped
  • 1/2 cup minced celery
  • 1/4 cup minced red onion
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons lemon juice
  • 1 teaspoon lemon zest
  • 2 tablespoons chopped fresh cilantro or parsley
  • 1/2 teaspoon kosher salt
  • Freshly ground black pepper

Method

  1. Mix:Place all of the ingredients in a medium bowl. Mix with a fork, mashing the avocado and breaking up the chunks of tuna as you go, until the ingredients are well combined.avocado-tuna-salad-method-600-1avocado-tuna-salad-method-600-2
  2. Finish and serve:Add more oil or salt and pepper if necessary, serve on your favorite sandwich bread or toast.
