A friend gave us a few absolutely enormous mangoes the other day and my oldest son wanted to use one in a smoothie. He came up with all of these ingredients and he was so very proud of himself when it turned out well. (A few of his smoothie creations have turned out less than wonderful.) This was a delicious smoothie and definitely a great one to try if you have lots of fruit already in the house! I really enjoyed this combination.

This was a creamy sweet smoothie with more spiced flavor than I expected from the ginger and the nutmeg. The boys wanted to eat this frozen; so I put their cups in the freezer for a couple hours. They ate it with a spoon and called it ice cream for their dessert after dinner
Sweet apples, sweetly tart green grapes and tart raspberries combined to make a very refreshing and not overly sweet smoothie. The banana is optional, but it will make for a creamier smoothie. The spinach, however, is completely required for this smoothie as it balances the other flavors. My kids and I were not overly impressed with the flavor of the smoothie without the spinach, but once I added the spinach, we all gave it two thumbs up....
After making peanut butter the other day, my boys wanted a smoothie with their lunch. I tossed some of the peanut butter in along with the other ingredients. The peanut butter made a bigger difference than I expected. It was richer and thicker than our usual smoothies. With additional frozen fruits, this would easily convert to an “ice cream” smoothie.

Did you know that you can eat the green leafy carrot tops? I’m not sure I’d want to dive right in and take a bite of a carrot top, but in a smoothie? Yes, please! With some coconut water left in the fridge after making Coconut Lemon Sours, I couldn’t resist trying it out in a smoothie. I loved this! Light and refreshing, this was a a great snack. You can adjust the thickness as desired by adding more or less water.
