Jump to Recipe We’ve had quite an assortment of radishes in our CSA boxes lately and I was ready to try something new with them. Prior to this, I didn’t even realize that cooking radishes was an option. I’ve always simply added them to salads and that’s about it. I had a small bunch of Easter Egg radishes and another bunch of French Breakfast radishes to use. So, I looked around for different cooking methods. To braise something is to...
It’s the first Sunday of the month and time for the Vintage Recipe Swap. When I saw that Christianna had chosen a pizza recipe for this month’s swap, I was immediately consumed with thoughts of trying a new crust using my beloved cauliflower. Let’s just say that the resulting cauliflower crust looked much more appetizing than it was. I have read many great reviews of cauliflower crust pizza, but while edible, this is simply not something...
I stumbled onto this recipe a while back on Jenn‘s site and I knew immediately that my husband would love this kicked up version of coleslaw. He and my oldest son are crazy about Sriracha sauce. I served this with some simple grilled chicken and potato fries for an easy Saturday night dinner. I really wanted to make this good and spicy for them and as a result, I added way more Sriracha than I can tolerate. I didn’t even attempt...
Jump to Recipe Plenty of fresh herbs combined with just a touch of lemon, to make this a terrific light lunch dish. I had so much fun clipping herbs and squash in the garden this morning. I couldn’t resist using some of the harvest in our lunch. Grilled Lemon Lime Chicken would pair perfectly with this for a heartier meal. I rarely make quinoa, because my two older boys aren’t big fans of it. I had forgotten how...
I serve squash this way several times a week between spring and mid summer. As long as the squash in our garden is in abundance, this is a simple and hassle free way to enjoy it. When the vegetables are garden fresh, a drizzle of olive oil and a dash of salt and pepper is all that they need to be delicious. I love oven roasted vegetables. However, if I don’t need to turn on the oven for anything else, there is little chance I’ll want...
This time of year I start craving salads with fruit in them. I wound up with 8 lbs of strawberries in the refrigerator last weekend and realized that I’d better start using them quickly. My oldest son was bouncing with excitement when I set this salad in front of him last night. With my bounty of berries, I made this salad three times last week and all of us still love it. Even my youngest eats every bite of this salad and asks for more!Get...
Bright red tomatoes, green bell peppers, yellow corn, green and yellow zucchinis all come together to make a colorful and flavor packed summer side dish that is perfect for an easy weeknight dinner. With some cooked chicken thrown into the mix, this could easily be a complete meal by itself. If you have ever had a vegetable garden you likely understand just how prolific squash plants can be when they are flourishing. (Good grief, I posted over...
These potatoes were inspired by the Vanilla Bean Mashed Sweet Potatoes that I have raved about in the past, as well as by the Sweet Potatoes with Spinach that I’ve made repeatedly over the past year. I wanted mashed sweet potatoes, but I had about 3 minutes to get them on the table by the time they had cooled enough to peel and mash. I made them again today because I liked them so much. Simply mash the sweet potatoes; then...
This was a meal completely inspired by this morning’s trip to the produce market. I saw the snow peas, my middle son begged for a mushroom dish (strange six year old, right?) and I found myself wondering if bean sprouts would translate to a bit of crunch in a stir fry. I really enjoyed this combination of flavors and my son was beside himself with joy over the mushrooms. Just about any variation on Jap Chae is likely to me smile,...
Creamy, slightly sweet, cauliflower and leek soup is a soup that tastes much richer than it actually is. This soup is creamy even before you swirl in a bit of real cream, the swirl of cream just adds to the flavor. This works well as an appetizer or as the main dish of a meal, along with a salad and some crusty bread if you have it. My middle son surprised me by loving this soup. My husband and I enjoyed it as well. The other boys...
